Recipes


These are recipes that I either made myself, got from somewhere else, or some combination of the two. All of these recipes are pretty good, in my opinion.

Breaded Salmon

Servings: 2–6 fillets

Ingredients:

  1. Add ~2 Tbsp of butter to a pan and set to medium heat and add ½ cup of bread crumbs once butter is melted.
  2. Toast until slightly golden brown, then add ¼ Tbsp of both rosemary and thyme, toast for another minute.
  3. Take off of heat and season with a pinch of salt and pepper, add about 2 Tbsp of water to support bread crumbs.
  4. Cut salmon into ~1 inch fillets.
  5. Create a mixture of 1:1 mayo and mustard and spread onto top of salmon, then top with breadcrumb mixture.
  6. Place aluminum foil on baking sheet and very generously oil it, then place salmon on foil/baking sheet.
  7. Cook in oven at 325°F for around 18-25 minutes.

Quick Chocolate Macaroons

Servings: 20 cookies

Ingredients:

Directions:

  1. Separate egg whites and yolks, put whites in a bowl and whisk egg whites until fluffy.
  2. Beat granulated sugar with egg whites until mix forms floppy peaks.
  3. Add almond flour, powdered sugar, cocoa powder, and a pinch of salt until mixed.
  4. Scoop quarter sized pieces of mixture onto parchment lined baking sheet.
  5. Bake at 350°F until wafers begin to crack (~15 minutes).
  6. Let wafers cool. Meanwhile mix half heavy cream and half dark chocolate [by volume] and melt chocolate mixture in microwave.
  7. Let mixture cool until it thickens.
  8. Spread cream onto two wafers and sandwich together.

Chocolate Chip Cookies

Servings: 16 cookies

Ingredients:

Directions:

  1. Mix brown butter, granulated sugar, light brown sugar, and dark brown sugar until soft and airy.
  2. While mixing, add eggs one at a time and then add vanilla.
  3. Combine flour, salt, baking soda, baking powder, cinnamon, nutmeg, and cocoa powder in separate bowl.
  4. Mix dry ingredients with wet ingredients and mix until just combined.
  5. Add chopped bakers chocolate and mix.
  6. Scoop cookie dough using ice cream scooper and let it sit in refrigerator for up to 3 days.
  7. Take cookies out of fridge and bake at 375°F for 18-20 minutes.
